Introduction

Food Processing deals the question 'how to make food and beverage' safe and cost-effectively. The domain covers individual processing machines (mechanical engineering), the design and realization of full production lines (including ICT) and the design of full production facilities (factories). The domain is covered into three major technology domains. a) food processing (structuring, mixing, cooking, etc.), c) Preservation Technologies to ensure that foods are safe and have sufficient shelf-life and d) packaging technologies (including AMAP, Robots, etc.).

There are three categories of technologies:

A. Known or widely accepted technologies.

B. Known Novel Technologies (e.g. pascalisation / HPP).

C. Unknown Novel Technologies.

Er zijn drie klasses van technologieën bekend

A. Gekende of te wel gangbare technologieën.

B. Bekende nieuwe technologieën .

C. Onbekende nieuwe technologieën.


Bekende nieuwe technologieën

Dit zijn technologieën die in de praktijk nog niet veel worden toegepast, of waarvan nog maar enkele praktijkimplementaties bekend zijn. Dit type technologie is vaak wel bekend bij kennisinstellingen of high-tech innovatieve ondernemers. De technologie staat op het punt van doorbreken, of bevindt zich in de Valley of Death. Dit soort technologieen zijn verre van mainstream. Vaak zijn er al een beperkt aantal machinebouwers bekend of is het mogelijk om met pilot-apparatuur aan de slag te gaan. Ook zie je dat dergelijke technologieën reeds beschermd zijn met octrooien. Een voorbeeld van een dergelijke technologie is Pascalisatie (HPP).
